That quest took him straight to Naples, where he teamed up with old‑school pizzaiolos who’ve been perfecting their ovens for generations. Between espresso breaks and late‑night taste tests, they nailed a design that hits 800°F‑plus, locks in that perfect char, and cooks your pie in under 90 seconds.
